View this post on Instagram High tannins, low tannins… what does that even mean? Tannins are found primarily in the skins, seeds and stems of the grapes and are essential to winemaking. Basically, you experience tannins when you drink a wine that creates a ‘drying’ sensation in your mouth and winemakers love them because they act as a natural antioxidant that protects the wine and makes it age-worthy. Yes, they do, but in some cases, especially with Champagne, you might not be able to find the year or ‘vintage’ of the wine. Instead, you might find an ‘NV’ sign, meaning Non-Vintage. Non-Vintage wines are made using a mix of wines from different years, which possess distinct characteristics. These are blended in order to create a better, well-balanced wine! Phylloxera is a microscopic insect that eats vine roots and nearly destroyed every single wine grape in the world in the late 1800’s, especially in France, where almost 70% of the vines were dead! Growers in Europe had to rip up and burn some of their plants but some vines survived and they’re produce wine of outstanding quality, sometimes called Pre-Phylloxera vines, like @elvio_cogno’s Barbera Pre-Phylloxera. You can feel the acidity of a wine on the sides and front of your tongue. High acidity wines make your mouth feel wet, like when you bite into an apple. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Essentially, acidity helps wine age longer, as it holds all the components mentioned above together. Well, in order to make wine, you have to ferment grape juice, and in order to ferment grape juice you need yeast. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Most wines are fermented with yeast bought from specialist suppliers. Some producers use these cultured yeasts because they are much more predictable when fermenting than wild yeasts. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Wild yeasts are present in the atmosphere of the winery, making the fermentation of the juice occur naturally.
