Chanterêves Bourgogne Rouge
This is a true boutique winery. Guillaume Bott and Tomoko Kuriyama are ‘negociant-vinificateur’ which means they don’t own any vineyards but buy the grapes from local farmers and work their magic in a really cool little winery on the outskirts of Savigny in Burgundy. There are dried cherry and raspberry notes followed by a classic leathery, earthy finish. As it’s a wine with a bit of age you get more savoury notes than with younger wines.
Food Pairing – because this wine has a bit of age it’ll work nicely with gamier dishes like grouse, pigeon and pheasant. White meats with earthy mushroom sauces or risotto are winners too.
