Corofin Carter Ashmore Vineyard Chardonnay
We were lucky enough to meet Mike Paterson, the man behind this wine, in mid 2019. He was over for a few weeks launching his new vintage Pinot Noirs, as a little introduction to the company we were served some of his Sauvignon Blanc and Chardonnay. The Pinots were great, but the chardonnay was out of this world and we just had to get some to share with you! There is a beautiful balance between the fruit and oak here. It is fruiter than Burgundy but less oaky than some of its Aussie cousins. A delicate toasty buttery note follows the initial fresh citrus and green apple fruit.
Food Pairing – great with shellfish, or white fish with a buttery sauce. Works equally well with a Sunday Roast Chicken.
