Domaine de Villaine Bourgogne Aligote

This is the family Domaine of Aubert de Villaine, the famous proprietor at Domaine de la Romanee Conti, producer of the most expensive wine in the world. This is his passion project. Bouzeron is the only appellation exclusively for the Aligoté grape in Burgundy and Aubert was instrumental in setting in up. The Domaine has been farmed organically since 1986 becoming certified in 1997. The wine has spent some time in a bit of old oak, which doesn’t add vanilla or toasty characteristics but more texture and body. Some great citrus, apple and pear fruit notes are mixed with a rich buttery and long finish.
Food pairing – think classic white burgundy for this so grilled fish and chicken. Works equally well with risotto, goats cheese and even something bluer.
